Farm Talk Tuesday: "What breed of cattle do you raise and is there much discernable difference in flavor?"

We have Black Angus, Red Angus, Simmentals, Herefords, and some crossbreds as well. However, most of the beef we sell is Black Angus. Our other breeds are mostly registered animals that we end up selling to other farmers in the area.

To be honest, I can't taste a difference between breeds. The biggest discernable difference in flavor will come from how the animals are fed. You will definitely notice a difference between grass-fed and grain finished beef. Remember, even grain finished beef was still feed grass and other forages for their entire life, but also received a grain ration after weaning.

You'll also taste a difference in wet-aged and dry-aged beef.

To us, a great steak is a great steak no matter how it was finished or aged. We all have different preferences when it comes to taste/flavor so you just have to try them out and see what you like best!
